In its
up-scale incarnation Pho Pasteur gives to Bostonians a taste of fusion
cuisine heavily inspired by the Vietnamese gastronomic tradition; the
place was inaugurated in August 2000. Pho Pasteur on Stuart Street is
defining what a quintessential high-end Vietnamese restaurant ought to
be; that is, opulent (but unpretentious) in its decoration and the food
must maintain the richness of its flavors while arranging spectacular
dish presentation. No effort was spared to create the right tone and
ambiance for their discerning diners. The walls are painted with rich
light blue and salmon pastel colors. The wood-work and molding on the
walls evokes a bygone French colonial epoch. The deep blue ceiling shimmers
with a myriad of small halogen lights reminiscent of a pleasant starry
summer night. On the wall, adjacent to the bar area, hangs a painting
depicting a Vietnamese bucolic scenery.
