The
Allston place was acquired in 1993 and was the 3rd Pho Pasteur
restaurant. It was an instant hit with the neighboring students,
artists and local families. Soon after the opening Le hired Don
Lang, the Cambridge architect, to expand and re-decorate the new
place to accommodate more patrons. The idea behind the renovation
works was to give the place a neighborhood ambiance; to that end
booths were added and a full service bar was also included.
At
the time this location was the largest Pho Pasteur. More items
were added to the menu, that is, in addition to Pho menus, meet,
fish and chicken were added to the selection; along with various
salads and desserts. This operation was no longer a simple
storefront Pho, but it became a full-fledged Vietnamese
restaurants.
